Savory pancakes

Savory pancakes with minced meat and vegetables are a simple recipe for dinner for the whole family. You can serve them alone, bake them in a sauce, or fry them in a pan.


INGREDIENTS FOR A PORTION FOR FOUR PEOPLE


  • flour 250 g

  • milk 500 ml

  • eggs 3 pcs.

  • oil 4 tablespoons

  • salt 2 pinches

  • minced meat 500 g

  • 3 peppers (different colors)

  • onion 1 pc.

  • garlic 2 cloves

  • tomatoes 2 pcs.

  • parmesan 50 g

  • Provencal herbs 1 teaspoon

  • sweet paprika 1 teaspoon

  • pepper 1 pinch





How to prepare dough for savoury pancakes?


To prepare minced meat pancakes, start by making the pancake batter. Add flour, milk and eggs to a tall bowl, along with a pinch of salt, and mix thoroughly.


If the dough is too thick, add a little cold water and continue mixing until you obtain a smooth, fluid mass.

Set the finished dough aside for about 15-20 minutes. In the meantime, prepare the filling for the savory pancakes.

Start by washing the vegetables thoroughly in cold water and drying them with paper towels. Seed and dice the peppers. Peel and finely chop the onion.

Heat a little oil in a pan and fry the previously chopped onion until translucent, then add the chopped pepper.

Fry everything together for a few minutes. Then add the minced meat to the pan and continue frying until nicely browned.

Blanch and peel the tomatoes, cut into cubes and add to the pan.

Season the stuffing with pepper, Provencal herbs and ground paprika and mix everything thoroughly.

Finally, add the pressed garlic and simmer everything together for a few more minutes over low heat.

After removing from the heat, set the stuffing aside for a moment, add the Parmesan and mix thoroughly again.





Fry pancakes from the prepared dough and stuff them with the prepared meat filling. Put the filling as you like, I usually do it in the middle of the pancake, then fold the sides in and roll the whole thing up. You can serve the pancakes right away or fried until golden brown.
